One day this week we had neighbors over on the spur-of-the-moment for a soup and salad lunch on the porch. It was a gorgeous day and we even brought the umbrella out of hibernation.
We are almost completely gluten free these days. We don't eat bread any more so, although I had plenty of soup and salad ingredients, I didn't have that little extra accompaniment to eat with our meal. As I do when it's just us, I decided to make one of our favorites, parmesan crackers.
These are SO easy to make and even though we don't really miss bread any more, they make us think we're having a treat with our meal. You can make as many as you need at a time. I often just make us 4 to go with a salad in our counter-top convection oven.
All it takes is a tablespoon of shredded Parmesan cheese to make each cracker. See below for the recipe, although it's not much of a recipe because it's so simple!!!
EASY GLUTEN FREE PARMESAN CRACKER RECIPE
Shredded Parmesan cheese
Optional: a topping like paprika, chili powder, chopped chives, dehydrated onion flakes, thyme or other herbs.
Preheat oven to 325 degrees Fahrenheit.
Measure out tablespoonfuls of cheese onto a parchment-lined cookie sheet, placing them far enough apart so they don't run together during baking. Spread and flatten the cheese so that it is flat even and not heaped up in the middle. Make as many crackers as you would like.
Sprinkle with topping of your choosing.
Place in oven. Check after 6 minutes. Remove if the edges and tops are lightly browned, or leave to bake longer if needed. They can become too brown very quickly so do keep an eye on them.
When done, remove from oven and use a spatula to move the crackers to a cooling rack.
Your crackers are ready to serve and you can eat as many as you would like absolutely gluten-guilt free!
